Is it possible as an admin to setup remote desktop such that I can log into
one of the staff computers and interact with there current session?

You can shadow a session...

http://support.microsoft.com/kb/279656

Otherwise Remote Assistance or TeamViewer are good choices. Remote
Assistance is built-in. You can use TeamViewer free for personal use
otherwise its a $$$$ product.

Default RE: Remote Desktop

Hi Daniel,
I use Real VNC to achieve this. You can download it for free at
http://realvnc.com
once setup you can connect to users machines and interact with it without
locking out or restricting the users control.
Hope this helps you out.
