As part of upgrading motherboard, I am going to install x64 WindowsXp.
On the previous system I had two SATA disks and they were being used
as regular disk(means there was no RAID) and I have lot of data on
those disks.
Before upgrading motherboard I would like to know whether will I be
able to retrieve the data that is already stored on the SATA drives?
Essentially I would like to know whether the data stored on the NON-
RAIDED SATA drives bound to Motherboard and its chipset.

No, it isn't. You can move the drive, attach it to an external case for
recovery on another system, etc. I do this regularly.
However, it's entirely possible that you WILL need to do a repair install if
the board is different enough. It's been pointed out here that the key
element of this is the drive controller.
