Under my C: , I see 6 folders with names similar to
66d12516519c257acc45cfd875312a . Inside, there is a update folder containing
update.exe , the Windows Service Pack Setup. What are these different
folders? Can I erase them?

Yes. Their purpose is to be able to uninstall the updates they relate to.
You will see a difference at MS if you decide to look at your history
because it won't be able to read them and show them to you. No big deal,
but it surprises most people.
