I have a couple of 19" CRT monitors kicking around standard analog
input), and was wondering if there is any easy way
to connect one to the video out on a portable DVD player.

If by analog input you mean rgb/composite input via rca jack
connectors then the answer is: most likely yes, if your dvd
player has svideo or composite out. There are splitters from
svideo to rgb around.
If you are talking d-sub connectors, then I wouldn't know how.
Never looked into that. Might be possible to solder up or buy a
connector/convertor.
I used a monitor with composite input from a vcr for many years
in lieu of a tv set.

Svideo to RGB? Yuck. May as well use a TV and skip the need to
convert.
And that would need to be more than a "splitter" or cable, anyway.
The scanning-rates are not compatible.

Probably a stone-age monitor, like for a C64. Modern monitors won't
scan at lowly NTSC/PAL rates.

Well I just bought a new (vivo)video card for a neighbour's
machine last week and it had one of those 'splitters' in the
box.
And you're absolutely right about my old monitor, it was a C=64
monitor. But the Dell 3008 monitor that I had sitting here 2
months ago has the 3 rca-jack component inputs ... see picture

As does my el-cheapo dvd player that I use for playing music in
my workshop.

That's not a "splitter". It's a cable that taps-off from different
outputs from the video card. The cable does no "conversions" or
"splitting".

Gosh, a modern 30" widescreen LCD that will handle component video
input. Whowouldathunkit?
How does that help the OP, who has "a couple of 19" CRT monitors
kicking around" that he would like to use?

The issue under discussion is montitors, not players. We all know
that most all DVD players offer mulitple video outputs, so I cannot
imagine why you'd even bring it up.

Use a TV. People are giving-away CRT TV's as they convert to
wide/flat/HiDef TV's.
