Epson vs. Mac OSX

Hi -
A while ago youall helped me get my Color Stylus 740 running perfectly.
Maybe now you can save my sorry butt again.
I just got a G4 running OS 10.4 and it was rough getting it to accept my
printer. Turns out it has its own MacHelp page! So it'll print, but I've
lost the nice window that shows in OS 9, where you adjust quality vs speed.
It prints fast and badly now. Moved back to the old Mac to print a pretty
pic, but should not have to.
On my new mac I also have OS 9 but it does not print any better when in 9,
nor does the good window show. There are a lot of windows, but not the right
'slider.'
Any suggestions?
