Default Vista Off 2007 and Off 2003

Vista came on my new machine, and I bought Office 2007. I want to go back to
using 2003, and have the disks. How do I do it?

Uninstall 2007, Install 2003.

Uninstall one, reboot, reinstall the other?
Assuming 2003 is retail
