Default Used Count

Is there any reliable way of finding out how many copies of Office are
installed on our workstations and how many are actually being used?

Other than asking each user or visiting each computer?

Yes, there are enterprise solutions (SMS, Alturis, etc.) and there are solutions that smaller organizations can use. The Microsoft Inventory Analyzer is one of them. Google it.
