Default Recurringt Tasks

Let's say I want to send an email to a customer every Monday.
I set this up as a recurring task.
Let's say the first occurence is Mon. Nov. 5, 2007.
I complete the task on Weds. Nov. 7, 2007.
How do I get the task to stop showing up on Office outlook 2007? It seems to
keep showing up as a completed task, on Weds., Thurs., Fri., etc.
I only want to see it again on Mon. Nov. 12, 2007, when it's next scheduled
to recur.
