Default Office 2007 deployment and converting existing files

We are preparing to deploy office 2007 through the various departments we
service for a local government agency. Most departments have a common
directory for shared files. We are concerned that, as people start to use
Office 2007 on existing files and save them in the new file formats, that we
will end up with duplicate files in differing formats. Does anyone have any
experience in such a deployment?
TIA

If users use the Convert command, found under the Office Button when you
open a file created in a previous version, then the previous version will be
replaced with the file in the new file format. Now, if they use Save As and
save it in the new version then you'll have duplicated files in differing
formats. Also note you don't have to convert to the new file format, you can
simply open the file, work with it, save it, and the previous format will be
retained.
