Default Office 2007 calendar

I have multiple people to set up meetings with, who are not MS Exchange
users. How do I send them multiples dates/times and let them select all that
are okay, and then schedule the meeting from that information?

Create each appointment, save them to your desktop. Create a new mail message and include instructions for the recipient to choose one (or however many you want them to) item to accept and double click it, send response when prompted. Then insert each of the saved appointments to your message (which should be Rich Text Format). Send it out.
