I will be building a new machine soon, probably a Quad Core, 2 Gig Ram etc
etc. I use my PC mainly for office stuff and Flight Sim, cannot run FSX
very well on my old P4 so that is why I am going to eventually upgrade.
I just want to know if there would be any advantage using Vista or should I
stick with XP?

Vista is not worth the cost.

Catch-22 situation here. Microsoft has a sunset policy in effect for XP
as they want people to move on towards Vista. Even though "official"
support will be ending XP has proven itself to be robust when properly
maintained.
If I were using Microsoft as my primary OS I'd stay with XP. Plenty of
experience can be found within these newsgroups for support.

Definitely XP. Vista offers nothing of value to me compared to XP.
To the contrary, XP does - by virtues of being less of a resource
hog and being more stable.

Until 64-bit, DirectX 10 games come... cheaper to stay with XP.

If you use firefox stick with xp, vista has no benefit. If you use
ie, might as well get the aditional security of vista's ie virtual
mode and UAC. Contrary to other people, I havent' had much trouble
with vista, once I figured out that norton was a piece of crap.

If you want to play games, buy an X-box or Wii or something like
that.... Then run a non-$GameOS on your computer, like linux

Norton (Symantec) is a POS for at least the past decade.

I feel more comfortable playing games on a keyboard.
