The video is already in a common format, DVD compliant
MPEG2, most likely. The audio is already one of three
common DVD compliant formats.
"AVI" is a common container format that can have video
and/or audio of almost any format. Encoding codec and
software, selection and use will require knowing which
audio and video formats you want to have in this "AVI".
The posters in these NewsGroups are often glad to provide
the benefit of their experience and willing to suggest formats and
software - but - to do so they would need to know what you
were looking to be able to use the video for. There is a great
deal of difference in say, video for display on a web page,
video for your iPod, video for HD display, video for editing
into a 3D project, or any number of other uses.

I suggest you convert the whole video to AVI then go to www.videohelp.com and download VirtualDubMod and cut out the part you
don't want.
