Default Downloaded subtitles

Normally to back up my DVDs I use either DVD Shrink or DVD Decrypter.
I would like to add other downloaded language subtitles to my DVDs
(.srt files) - does anybody know if this is possible without having to
rip to avi format and rebuilding the DVD from avi and srt? Also any
recommendations for ripping from DVD to avi?

VirtualDubMod will accept the MPEG video
VobSub can work with the .srt files
The two together should handle it for you.
