Russell,
I have 3 DSLR's, (2 Canon 30D's & a 300D) I have the times & Dates synced
up... here is my process...
1) I download all my files with Canon's Zoombrowser prog. to a 'holding'
folder on one of my drives, it puts the RAW files in folders sorted by and
including the date in the folder name
2) I then use PS's Bridge to add my EXIF copyright info
3) I sort all the files by date shot, this gets them in sequence (using 3
cameras is tricky!)
4) I then renumber all my files (I shoot RAW) with a consecutive number so
each file has a unique 'serial' number
5) the files are then transferred to a folder on an external 500gig USB
drive
the folders have the date, beginning serial number of that folder, and
shooting info eg:
2008_07_07 23000 kevin's shoot
6) inside this folder is a sub folder that holds jpegs made from the RAW
files
7) if I make a PSD file they all go into a separate folder
8) I have a backup 500gig external drive and the stuff from the master drive
is backed up there...
I shoot musical bands allot, so if I go past midnight, I will put all of
that bands pix in one file usually using the first evenings date (ex. Friday
& Saturday)
This works for me so far... CS3 is not very good for keywords and such, so I
am looking at getting Lightroom, as I understand this is good for keywords
and keeping track of files etc. (if anyone has a comment on how this works I
would like to hear...)

Lightroom would streamline this by quite a bit, but folks who shoot RAW
+ JPEG often don't like the way LR handles these dualities. One solution
is to never shoot same.
One thing you didn't mention is the synching of cameras before the
shoot! How often do you have to do so ?
