Default which photo-emailing tools keep EXIF and which don't?

I just implemented an upload-by-email feature for my photo-sharing
site. I've seen advice to people on this group about different tools
that shrink photos for emailing. I imagine some of these tools strip
EXIF info, which my site needs to auto-organize photos by date. I want
to warn users away from such tools and recommend emailing in ways that
keep EXIF.

What do you all use and what happens to EXIF?

Maintaining IPTC captions would be nice too, but less important.
