Is there software out there that makes it possible to make an overall
image out of a series of smaller images - whether it be the same
subject of dfferent subjects? And is there a name for this method?

This type of procedure is known as a Mosaic.
I have used PhotoMosaique which you will find at http://www.photofiltre.com/
It is a French program but the site is in English.

Called a Colage, it is offered in all the photo programs I have and a
print program that came with my Canon printer

Some of the earlier versions of editing programs would call this a
"panorama maker". Panoramas usually work quite well, especially if you
overlap the individual frames sufficiently. A number of cameras have a
setting for it.

I think the OP is talking more about mosaic than panorama or collage.
Imagine a roman mosaic where each tiny tine is a photo. Each photo-tile
is composed predominately the colour required for that position in the
mosaic.

There WAS such a product about a year or two ago- have not seen it for a
long while. I suspect it was not a hit. I sure do not remember the name
nor the company.
I would call such an image a mosaic.
Sort of reminds me of the old days, before graphics printers. There
were a number of programs that determined the darkness of each letter in
the alphabet, and converted the image to letters. Of course, the image
was limited to about eighty columns wide, so it sure was not high res :-}
