Not that one is better than the other but some people say that there are distinct differences between the Color taken with Canon Lenses on Canon bodies (digital only) and the ones taken with Nikon Lenses on Nikon bodies.
To me it appears that Canon images have more vivid color while Nikon color is somewhat more muted and/or pastel looking. I seem to like both and only have a preference on certain images and not across the board.
I am curious to know what others feel. So far people only are vocal about sharpness and I think color is just as important.

On the Canon XTi, the menu item "picture style" allows for varition in
color settings.

I haven't done the same type of work that I did with film cameras, but I can
verify that the old film cameras had distinct colour differences between the
various lens coatings.
I have a three ring binder full of data sheets I developed that boils down
to when you use this Canon or Pentax camera with a this lens shooting this
film manufacturer / type onto this brand of paper, then set the colour
settings as follows...
In the area of digital, the colour discrepancies probably get muddied a bit
because of the processing factor; each manufacturer gives you more than one
setting to adjust your colours -- both with colour balance and for viewing
preferences.
The bottom line is that if you don't like your camera's colour, play with
your settings. You will probably find something that works in just about
every situation.

With film, you were pretty much stuck with what the film's
maker provided, unless you were willing to undertake
processing the film yourself and making prints. As with
film, the makers of digicams set the color response to what
they think the customers want. But it is more or less easy
to adjust the colors to your own preferences on your
computer or in the color balance setting in the camera,
depending on how particular you are about the results.

It is my own personal opinion the the top tier is Canon and Nikon. While the other brands are good I think they are in a subordinate class. Notwithstanding that I would say most of the time you will be hard presses to claim one image is consistently better than another after the image is edited and printed.
That said I still fell Canon and Nikon are at the head of the class.
