I would like to find out pros and cons of installing CHDK on my
S3. Could you please direct where? And if I change my mind after
installation, could I go back to what I had originally and be sure

You should always be able to get back by installing the latest firmware
upgrade from the manufacturer's web site - I'd get that first.

CHDK doesn't overwrite the camera's firmware, it runs directly from the
SD card. Take out the SD card with CHDK on it, power the camera back up
again and it automatically reverts to its internal firmware.
