I have always had the ability in Word to highlight a block of text
with the mouse and then start typing. Once I start typing the text
highlighted/selected would be deleted and the text I was typing would
replace it. Either can't do it anymore in Word 2007 or it stopped
doing it. Can't remember when it physically happened. Is there a way
to turn this functionality back on in Word 2007 if I've explained what
I am having an issue with?
Thanks.

Unfortunately I don't have Word '07 installed yet to test or to tell you
exactly how to get here but in all previous versions of Word that change is
made in the Tools menu, Options, Edit tab. One of the first selections is
"Typing replaces selection" which needs a checkmark. Hopefully with this
information you can find the same location in Word (or at least look for
those exact words in '07s help to find out how to get there.)
