I'd like to be able to use more than 2 phyisical hard drives
with my GA-M55plus-S3G. Can I simply purchase an IDE
controller card to plug in, and get that capability?

Yes... Most of the ones I have seen are PCI. I am running a Promise
Ultra 133 in this PC. Many people buy them if their BIOS is so old, it
doesn't support the new large hard drives.
