What size screws is recommended for standard drywall hanging in a garage.

For 2x4s and 3/8" drywall, I'd recommend about inch and a half screws.
For sheetmetal studs or thinner drywall, use shorter screws.
But it's mainly a matter of taste or familiarity.

Am a carpenter by trade but hang and tape drywall quite a bit.
On a commercial project or tract homes, these rules apply:
1 1/8 screws for 1/2" drywall
1 1/4 for 5/8" sheetrock which is used in carports

it depends on the thickness of the drywall, but this isn't
