Although I already made the move in getting a second card (the now rare 7800gt, on it's way), is there ANY benefit to 2d performance with SLI or is it strictly 3D? I mean, does the memory at least double in SLI? I don't go all out in video cards like I used to since I have the Xbox 360, but since I did get an SLI motherboard and my card is now hard to find, I figured that I might as well do my thing. I still can't run San Andreas at full ***!

I have MSI K9N Diamond
2 GB RAM(4-4-4-15) 800mhz
MSI 7800gt
Opteron 1212 (OC'd 2.4ghz)

Even with the seemingly nice Direct X 10 features, I still do not plan on doing much of an upgrade on the graphics side. I figured that this should do it as of now. Do I get a boost in anything but 3D? I do graphic design and video editing.

You are correct in thinking that you can use SLI in non gaming
applications. Many do, but mostly they use SLI Quadros in workstations:

GeForce SLI is primarily for gaming, but OpenGL support is quite good
